Brian Lacriade, 17, will be graduating from Carshalton College and starting a job as a Commis Sous at the prestigious Maze restaurant in London, one of the Gordon Ramsay restaurants.
Brian joined Carshalton College in September 2011, to complete a Level 2 NVQ in Professional Cookery and Catering. His role has involved preparing and cooking the dishes, designing menus and working to a tight budget to make a profit.
When looking for a placement, Brian visited the Maze Restaurant website and completed an online application form before being invited to a trial day. Brian completed the tasks in the typical day of a Commis Sous. After a tough double shift in the restaurant Brian was successful and was offered the full-time role.
Brian applied to Maze Restaurant as he wanted the challenge and the opportunities that come with working in a top restaurant. Brian has followed his own motto 'with hard work & dedication comes great success' and has achieved his goal.
Maze restaurant is one of the Gordon Ramsay restaurants and offers five private dining rooms, a chefs table dining experience and food that breaks formal traditions and serves French cuisine with Asian influences.
Carshalton College's in house training restaurant, Nightingales, welcomes guests to their coffee mornings, lunches, fine dining and a variety of themed nights during the year. Meals are prepared and served by our enthusiastic students under the supervision of experienced chefs with our Full-Time, Part-Time and Apprenticeship courses.
